Ingredients
Salmon balls
•250g potato or sweet potato cut into cubes •400g tinned or fresh cooked salmon •1 tbsp of lemon juice •1 tbsp dill, finely chopped •100g breadcrumbs •1 tbsp mayonnaise •¼ teaspoon garlic granules •3 spring onions chopped •Olive oil cooking spray
Avocado and tomato dip
•1 avocado •1 clove of garlic, crushed •1 tomato •2 tbsp Greek yogurt •½ tbsp lemon juice •1 tbsp olive oil •½ tsp dry parsley
Preparation
Salmon balls
- Preheat oven to 180°C Line baking tray with baking paper.
- Boil potatoes until tender, drain and mash until smooth
- Add salmon, lemon juice, dill, spring onions, mayonnaise and garlic granules to mash and mix well.
- Place breadcrumbs on a plate. Roll salmon mixture into balls and then roll each ball in breadcrumbs.
- Place onto tray and repeat. Spray with oil. Bake for 15 to 20 minutes or until golden.
Tip: Perfect to pop in the freezer and bake in the oven for 15 mins to reheat
